Wine box Ovilos

This wine package consists of Ovilos white and Ovilos red from the maker Biblia Chora. Both wines have distinguished themselves many times at various wine competitions for their great flavours. The wines are packed in a beautiful wooden case with closure, which makes this package also suitable to be given or sent as a gift.

Ovilos white

Ovilos White is a most exciting blend of two grape varieties, Assyrtiko and Semillon, grown in the warmest but most barren spot in the Estate’s vineyard located on the slopes of Mount Pangeon. The Semillon’s fragrant expression and ageing ability are complemented by the strength, structure and exceptional freshness of the Assyrtiko. After a brief maceration period on the skins, the wine is fermented in French oak and left in contact with the lees in barrel for a few months to add structure and complexity. This dry white wine eyes bright yellow with light green hues. It is ideally enjoyed at 12°C and can be aged for 10 years or longer. Its fine nose is expressive with aromas of apricot and honey on elegant layers of tropical fruit and citrus, all amplified by scents of nuts and vanilla.

Pairings:

Ovilos White matches well with firm fish on the grill, seafood risotto, sushi, turkey and other poultry, and cheese soufflé.

Ovilos red

Ovilos Red is a pure Cabernet Sauvignon made from our first vineyard block that got planted at the foot of the Pangaion Hills. This varietal wine takes its unique character from prolonged maceration of the grapes, extended ageing in new French oak barrels for 16 months and maturation in bottle for a further 24 months prior to its release. It has a deep blackish claret red colour. Enjoy it now at 16-18°C or keep cellared for up to 15-20 years. The palate of this well-balanced, vibrant red wine delivers an abundance of flavours of black cherries and raspberry jam, all entwined with a touch of sweet chocolate and acute tannins for longevity. Its complex bouquet brims over with intriguing smells of ripe fruit, cassis, cedar wood, violet flowers and tobacco leaf.

Pairings:

Ovilos Red is appealing on its own and goes well with veal cuts, spit-roasted lamb or goat, venison and other game, and truffle recipes.
