The most famous type of olive is grown in the certified area around the port city of Kalamata, in the south-west of the Peloponnese. A farmers' cooperative collects and trades this special olive. It is an olive with a soft and fruity flavour, a large stone and a pointed shape. Hand-picked and matured in a mixture of sea salt and red wine vinegar.
