Skin contact under controlled conditions, alcoholic fermentation by native flora isolated from the specific block, at gradually rising temperatures with "pigeage", preservation of wine "sur lie" for 12 months with regular stirring. 18 months in new Allie Bertrange French oak barrels, medium grain, white-roasted and 18 months in bottle before release. No treatment or filtration before bottling. Opaque ruby red colour. Fine, rich, intense. Black crystalline fruit, cassis, leather, cocoa, spice. Full-bodied, creamy, with nice ripe tannins. Well-balanced and round with excellent development on the palate and a long finish.
Excellent range with succulent red meat, barbecued with spicy sauces. Cute combination with cooked chestnut and plum meat.
