Grapes for this wine are harvested at maximum natural ripening. Alcoholic fermentation in large French oak barrels, followed by maturation of the wine on the fine lees for 8 months. After bottling, the wine matures for at least another 6 months in bottle. A wine of unique intensity, combining traditional Nykteri vinification with a more innovative approach. Layered aromatic character of ripe, caramelised citrus and stone fruits, honeycomb, toasted nuts and vanilla notes. Exuberant, rich and ripe mouthfeel, with very good condensation and lingering finish. A gourmet wine due to its complexity, with great ageing potential. The vines are planted in terraces, a traditional pattern of spirals ("kouloura"). 100% Assyrtiko.


Hard cheeses such as Arseniko from Naxos, ladotyri and chloro from Santorini. Great oily fish and meat with white sauces. Can also be paired with fish roe or sea urchin.
