For the chicken marinade:
  • 800 grams boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 tablespoons extra-virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 cloves of garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
For the tzatziki sauce:
  • 250 grams Greek yogurt
  • 120 grams cucumber, grated and drained
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove of garlic, minced
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
For serving:
  • Pita bread
  • Sliced red onions
  • Sliced tomatoes
  • Fresh parsley, chopped
Preparation:
Prepare the chicken marinade:
  • In a bowl, whisk together the extra-virgin olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper.
  • Add the chicken pieces to the marinade and toss until well coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight for maximum flavor.
Prepare the tzatziki sauce:
  • In a separate bowl, combine the Greek yogurt, grated and drained cucumber, lemon juice, minced garlic, extra-virgin olive oil, fresh dill, salt, and pepper.
  • Stir well to thoroughly incorporate all the ingredients.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
Skewer and grill the chicken:
  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
  • Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
Assemble and serve:
  • Warm the pita bread on the grill for a few seconds on each side.
  • To serve, spread a generous amount of tzatziki sauce on the warmed bread.
  • Slide the grilled chicken off the skewers and place it on top of the sauce.
  • Garnish with sliced red onions, sliced tomatoes, and fresh parsley.
  • Fold the bread over to create a wrap or serve open-faced, and enjoy!

 

Notes:

Feel free to add additional toppings such as crumbled feta cheese, sliced cucumbers, or Kalamata olives for extra flavor and texture.
If using wooden skewers, remember to soak them in water for at least 30 minutes before threading the chicken to prevent them from burning on the grill.
