Ingredients:
  • 4-6 large tomatoes
  • 4-6 courgettes or peppers (you can choose one or a combination)
  • 400-500 g long-grain rice
  • 1 onion, finely chopped
  • 2-3 cloves of garlic, finely chopped
  • 250 g diced vegetables (such as carrots, aubergine or mushrooms)
  • Fresh herbs (such as parsley and dill), finely chopped
  • 50 ml extra virgin olive oil
  • 200 ml vegetable or chicken stock
  • Salt and pepper to taste
Preparation:

Preheat your oven to 190°C.

Prepare the vegetables:
  1. Cut the tomato, courgette or pepper from the top.
  2. Carefully hollow out the insides with a spoon and remove the seeds and membranes to make room for the filling. Set the hollowed-out vegetables aside.

 

Prepare the filling:
  1. In a large bowl, mix the long-grain rice, chopped onion, chopped garlic, diced vegetables, fresh herbs, extra virgin olive oil, salt and pepper. Mix well to integrate the flavours.

 

Stuff the vegetables:
  1. Spoon the filling mixture into each hollowed-out vegetable, making sure they are generously filled. Leave some space at the top to allow the rice to expand while cooking.

 

Place in a baking dish:
  1. Arrange the stuffed vegetables in a baking dish, making sure they are tightly packed together.

 

Add stock and fry:
  1. Pour vegetable or chicken stock into the baking dish, around the stuffed vegetables, to keep them moist during baking.
  2. Cover the dish with aluminium foil and place it in the preheated oven.

 

Bake and remove from oven:
  1. Bake for about 45 minutes to 1 hour or until vegetables are tender and rice is cooked.
  2. Remove the foil during the last 15 minutes of baking to lightly brown the top.
