Greek marinade for lamb shanks or shoulder. For both the oven and the barbecue.


Requirements for 1.5 kg:
  • 100 ml olive oil
  • Juice of 2 large lemons
  • 1 clove of garlic chopped
  • 1 teaspoon oregano
  • pinch of thyme
  • 1 teaspoon paprika powder
  • Sea salt
  • Black pepper
  • 500 grams of potatoes


  1. Mix the ingredients well together and pour over the lamb. Turn occasionally. Leave to marinate for at least two hours.
  2. Bake the lamb in the hot air oven with the marinade at 140 degrees for about two hours. Turn the lamb every now and then. After an hour, you can add chunks of potato, seasoned with olive oil, salt, pepper and oregano. Variation on this marinade, add 100 ml white wine.
  3. Try this dish with the other types of meat as well. It always tastes delicious. Take your time for this dish. All types of meat, depending on their thickness, should be left in the oven for 2 to 3 hours. Then the meat is well done, the fat in it is dissolved and it falls apart deliciously.
