A small olive with little flesh and a large stone that gives the light nutty flavour to this olive oil. The olives are grown in the hills of the controlled area around the port city of Kalamata, in the south-west of the Peloponnese. They are picked by hand in the period December - January. The farmers' cooperative certifies, collects and trades this olive oil with the aim of achieving a fair price for the producers, resulting in a better price for the consumer.
Taste characteristics: deep green colour, fresh aroma and full flavour with a slight spicy undertaste of almonds. Rich in unsaturated fats and antioxidants; indispensable in a healthy diet. Lowers cholesterol. Acidity: The PDO variety has a maximum acidity of 0.6%. Suitability: PDO olive oil is best used in dressings, salads or on its own. Of course, you can use it for frying, light fish dishes such as prawns, salmon and vegetables.
